General Summary:

Responsible for the overall success of the restaurant, and meeting or exceeding planned objectives for revenue and profit. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maximizing financial performance in all areas of responsibility. Supervises all kitchen and bar areas to ensure a consistent, high-quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all food preparation areas (e.g., banquets, restaurants, bar/lounge) and all support areas (e.g., dish room and purchasing).

Principle Responsibilities:

  • Managing inventory so that all necessary ingredients are stocked for service
  • Hiring new staff and providing training to facilitate quick acclimation
  • Streamlining the kitchen and bar processes to maintain prompt service times
  • Continuously developing and maintaining the restaurant menu
  • Setting regular cleaning standards for the kitchen and bar and verifying that staff is maintaining sanitation levels
  • Creating schedules for all kitchen and bar staff
  • Tracking kitchen and bar finances to identify areas of potential waste


Job Duties:

  • Identifies and resolves problems in a timely manner. Develops alternative solutions, uses reason at all times. Makes timely decisions while exhibiting sound judgment. Includes appropriate people in decision making process.
  • Maximize Customer Service. Respond and resolve all guest complaints timely and appropriately. Manages difficult or emotional customer situations. Responds promptly to customer needs, requests for service and assistance.
  • Demonstrates group presentation skills. Speaks clearly and persuasively in positive or negative situations. Writes clearly and has the ability to read and interpret written information. Communicates change effectively.
  • Exhibits objectivity and openness to the views of others and contributes to building a positive team spirit. Upholds organizational values, treats people with respect and promotes a harassment free environment.
  • Interviewing, training, and evaluating all kitchen and bar teams’ performance.
  • Accuracy of time tracking for all kitchen and bar teams’ weekly payroll. Staffing appropriately to stay within budgetary guidelines.
  • Providing quarterly cost analysis to ownership.
  • Quarterly Mix of Sales Reporting/ P&L commentary to Accounting, Director of Ops, and Ownership.
  • Position will support all food and beverage outlets throughout the Rupal Hospitality portfolio.
  • Able to deal with frequent change, delays or unexpected events, changing approach or method to best fit a situation.
  • Take independent actions and calculate risks, meets challenges with resourcefulness, generates suggestion for improving work and takes responsibility for own actions. Delegates work assignments, sets expectations and monitors delegated activities.
  • Ensure State and Federal Labor postings are current.


Qualifications:

  • 2-3 years preferred of satisfactory work experience, preferably in a culinary-related field.
  • Ability to work flexible hours and perform duties in an orderly fashion under general supervision.
  • Excellent leadership and communication skills
  • Familiarity with inventory control procedures
